Lemon Grass Pork ala Mommy Dharlz

This is one of my sister's experimental recipe that has reaped good reviews. The main ingredients are only pork (Adobo cut from Monterey), lemon grass stalk and leaves, soy sauce, vinegar and freshly ground pepper corns. Mix all in a mixing bowl and let stand overnight. To cook, simply sauté in a little oil in low heat. For fancy plating, let your imagination soar. The photo above is just the Lemon Grass Pork after cooking..

Adobong Kangkong

Do you wanna know how to make Adobong Kangkong? This is great as a side dish for Fried Fish Fillets or Roasted Fish or whatever you woudl like to partner this with..

Ingredients: Garlic, Onions, Soy Sauce, a little oil, and Freshly Harvested Kangkong Leaves..
Directions:

  • Preheat pan, add little oil.
  • Sauté garlic, onions and Kangkong leaves
  • Add a little soy sauce

Optional:
  • You can add other spices that you may like.
  • You can also add flaked fish or canned tuna in natural oil, using the said oil to sauté ingredients.

This is SPICY ADOBO FLAKES at TNT. This foodie is best partnered with a very cold drink. And actually, can be prepared easily at home. The secret is in how you flavor your Adobo before flaking them..

Here's our version at the Orange House.
  • Cook Adobo the regular way (use pork with less fat) or your style
  • Let it sit to cool
  • Use two forks to flake each Adobo cut
  • prepare a new pan to cook them again
  • put a little butter and and keep the heat low
  • place all the flaked Adobo and constantly fold to prevent from sticking in the pan
  • OPTIONAL:
  1. you can add powdered spices like garlic powder and chillies powder if it's not hot enough for you
  2. you can also add thinly sliced ginger and garlic to add to the taste
When done, or when you see that they are already crisp enough to your liking, take them off the pan and serve on top of your favorite rice..

SECRET: You can actually cheat by using a microwave or an oven toaster in making them crispy flakes.. But that method above gave us wonderful results..

Crab in Coconut Milk

Ingredients:

1 kilo Medium sized crabs
fresh coconut milk from a large coconut
Lupu leaves
ginger
garlic
onions

Procedure:

  1. clean crabs
  2. place crabs in a deep pan along with the rest of the ingredients except Lupu leaves
  3. simmer
  4. add Lupu leaves
  5. season to taste
